I need to bring a meal to a woman who just had a baby. I always bring either Italian or Mexican lasagna. Bo-ring! Plus, if it is hot outside I'm sure she won't want some heavy meal. Do you have any suggestions?
Haha... I just made lasagna for a friend the other day who had a baby. I was discussing it with another friend & we agreed it's such a difficult thing. I tend to do those heavy things... lasagna, mexican casserole, manicotti, chili. I once got all the fixins for fajitas when Alexa was born from a friend. That one was pretty good cause all I had to do was heat it all up. She gave me the tortillas, the chicken ready to heat, shredded cheese, beans, spanish rice, and sour cream. I think she would have given guacamole as well, but we don't like it.
Ingredients for a big southwestern salad- black beans, corn, diced bell pepper, green onions, tomatoes, shredded rotisserie/grilled chicken and lots of lettuce- just pack each in a plastic baggie and all she'll have to do it throw it together. Best dressing ever- Brianna's Chedder Chipotle... Mmmm! And it'll be even better with the addition of an avocado and crushed tortilla chips.

What about a green chili chicken casserole type thing? It's a little lighter, and mixes it up a bit?
